Bruce Kalman is a seasoned chef and restaurateur whose culinary journey began at the age of 13 in a family-owned pizzeria in Paramus, New Jersey. His passion for cooking led him to Hudson County Community College in Jersey City, where he honed his skills through a hands-on culinary program. After completing his education, Kalman worked under renowned chefs such as Paul Bartolotta at Spiaggia in Chicago and David Burke at Park Avenue Café in New York City. His career then took him to executive chef positions at notable restaurants including Okno, Green Dolphin Street, and Coco Pazzo.
In 2011, Kalman moved to Los Angeles, where he played a pivotal role in launching The Misfit in Santa Monica, followed by a tenure at The Churchill in West Hollywood. His commitment to Northern Italian cuisine and handcrafted dishes led to the co-ownership of UNION in Pasadena and Knead & Co. Pasta Bar + Market in Los Angeles' Grand Central Market. These ventures showcased his dedication to using locally sourced ingredients and traditional cooking techniques.
In 2019, Kalman relocated to Las Vegas and opened SoulBelly BBQ in the city's Downtown Arts District in 2021. This restaurant marked a departure from his Italian roots, embracing regional American barbecue with a chef-driven approach. SoulBelly BBQ offers dishes like salt and pepper brisket, Carolina pulled pork, and house-made sausages, complemented by a selection of sides and desserts. The restaurant also features live music and a curated beverage program, reflecting Kalman's multifaceted culinary interests.
Beyond his restaurant endeavors, Kalman is the founder of BK Brinery, an artisanal pickle company, and has collaborated with brands like Sunkist Growers and Creekstone Farms to promote sustainable sourcing.
